Mark Bittman, The Food Matters Cookbook.  Mark Bittman is the voice of moderation in the "locavore/farm-to-table/should I be vegan?" dialogue.  His cookbook is creative, fresh and full of common- sense hints and tips.  The recipes are original - I did not see the 175th version of beet, cheese, and nut salad - and very simple.  Give it a try!
